When I first encountered this recipe, I couldn't help but raise my eyebrows with skepticism. Combining bananas and spinach seemed more likely to result in some sort of healthy smoothie than in mint chocolate chip ice cream. After watching, however, I'm more than a little curious about what it tastes like. She even mentions that her daughter ate this ice cream for breakfast, and since children tend to be harsh food critics, I'm intrigued.


This recipe comes to us from Dani Spies, a fitness and weight loss coach who runs CleanAndDelicious.com. On her website, she describes her approach to health as "whole-istic," taking into account how the connection between the mind, body, and emotional well-being play into a person's happiness. Rather than focus on dietary restrictions and dissatisfaction with one's current body shape, Spies advocates for a more positive and accepting attitude.
