The Domestic Geek Offers Passersby A 'Mobile Meal Makeover'

In this charming YouTube series from Kin Community, Sara Lynn Cauchon (aka The Domestic Geek) scopes the streets for unhealthy meals and gives them a "mobile meal makeover." With her trusty food truck and dedication to healthy yet delicious food, Cauchon strives to improve eating habits one meal at a time. In this installment, she tackles a chocolate croissant and offers a delightful alternative.


Rather than deprive her makeover subject of the sweetness that a chocolate croissant promises, Cauchon suggests an equally decadent alternative. Her gluten-free, protein-packed "power pancakes" are made with bananas and eggs, then garnished with strawberries, almond butter, and a drizzle of honey. Depending on your preferences, you can alter her recipe by adding whatever fruits strike your fancy. It's also worth noting that, rather than serve them as a traditional pancake, Cauchon folds the power pancakes into a taco shape for convenient on-the-go eating. After watching this video, I'd definitely choose this naturally-sweetened treat over a chocolate croissant any day.

Cauchon demonstrates the preparation process clearly in the video, but for those of you who are curious, here is a list of ingredients:
1 mashed ripe banana
2 eggs
1 tsp coconut oil (for frying)
1 tbsp almond butter
1 tsp honey (to drizzle)
3-4 sliced strawberries
